All the activities were hosted in Vardakeios school building. We used a big classroom which was connected with a kitchen with a sink. For cooking we used two induction cookers and an oven which was in another room. The cooking facilitator supplied us with most of the kitchen utensils but Vardakeios also contributed with basic utensils.

7 of them were foreigners from Albania, Egypt, Argentina, Poland and Hungary/ all unemployed
9 of them were natives. 6 of them were unemployed, two of them retired and one of them part time employee.
Vardakeios Healthnic Workshop was conducted from 16th of October to 4th of December 2018. The cooking part was realized in 10 sessions of 3,5 hours each and the digital storytelling part in 4 sessions of 3 hours each.
The sessions were held at the John Archer Hall which is based in the heart of the Liverpool 8 community. The kitchen was spacious with a large catering range, well-resourced with cooking utensils and crockery. The working area was spacious. It was an excellent facility. We also had full access to the garden and a variety of herbs and vegetables growing to enhance participants’ understanding of the various dynamics that contribute towards a healthy diet – local, fresh, seasonal produce and affordability.

Sessions were attended by an average of twelve participants at each session (five men and seven women), with minimum absences. Participants were from Liverpool, Trinidad, Turkey, Pakistan, Sudan and Botswana.
The indigenous Liverpool participants were currently unemployed but were integrated in local community and cultural life. The participants new to Liverpool were also unemployed, some in the process of seeking asylum, attending English classes and motivated to develop their integration.
MRSN Healthnic Workshop was held over seven weeks, 31/10/18 to 12/12/18, with a weekly four-hour session 11 a.m. to 2 p.m. The hours were chosen to enable participation for parents with children attending nursery and school.
Rosie Ashton facilitated the cooking sessions, three regular assistants (Bella, Yanni and Ali) prepared, attended and participated in all seven sessions Ewan Roberts facilitated the digital storytelling sessions.
All the activities were hosted in the spaces of Villa Fuhrmann in Luserna San Giovanni, with the collaboration of the Diaconia Valdese (Waldensias institution) – Adult and Territory Service and Migrants Service. We worked in the kitchen of the restaurant “Cose Buone” that provided also adequate clothing. We had access to all the cooking utensils but we preferred to bring knives ourselves as the ones they had were too big and dangerous.

12 of them were foreigners from Equatorial Guinea, Ivory Coast, Ghana, Mali and Nigeria. 11 of them were asylum seekers, 2 of them were from a Waldensias service called “Adulti e Territorio” (adults and territory)

Diciannove Healthnic Workshop was conducted on 5th 6th 7th 9th November 2018. The cooking part was realized in 3 5/hours sessions each and the digital storytelling part in 1 7/hours session.
All the activities were hosted at Danmar Computers office, with access to a small kitchen. The first, second and last days didn’t require using the kitchen facility. The cooking was part of days three and four. Participants brought their own dishes, some utensils were guaranteed by Danmar. Participants used a mobile cooker, microwave and blender to prepare the most demanding dishes.

The Polish Healthnic Diet Workshop was conducted 06-12 December, 2018. It was divided into five days, corresponding to five sessions. The cooking part was realized in the third and fourth sessions of 3,5 hours each and the digital storytelling part while the fifth sessions of 6 hours. Workshop participants met once again to review their digital stories which compromised of 3 hours.
All the activities were hosted in the LCETB (Limerick and Clare Education and Training Board) in Newcastle West in County Limerick. This was an Adult Education Centre. We used the big kitchen in the centre which also had a huge table for the shared meals and for the preparation of the food. For cooking we used the cooker and the oven. The cooking facilitator supplied us with most of the kitchen utensils but the facilitator also contributed with basic utensils. Most of the vegetables were from local producers and the flour and grains that were used were whole meal.

The participants were a mixed cultural group of Moldovan, Romanian, Russian and Portuguese most of whom work together in a neighbouring town factory.
ITT Healthnic Workshop was conducted from 16th of October to 18th of December 2018. The cooking part was implemented in 8 sessions of 3,5 hours each and the digital storytelling part were conducted in sessions 5 and 6; however, the concept of the digital stories was already discussed during the second session. All sessions were in the evening and started at 5.30 p.m. Our workshops were facilitated by Alex McKillican as the course tutor and Claire Russell as the nutritionist. Valerie McGrath and Kristin Brogan also assisted in the facilitation of the workshops.
